  • Fork or potato masher
  • Mixing spoon

Ingredients

  • 1 block (200g) full-fat feta cheese
  • 500 g cherry tomatoes halved
  • 3 garlic cloves minced or sliced
  • 3 tbsp olive oil
  • 250 g pasta penne, fusilli, or farfalle
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1/2 cup reserved pasta water optional
  • Fresh basil leaves for garnish optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, arrange cherry tomatoes and place the block of feta cheese in the center.
  • Drizzle olive oil over the feta and tomatoes. Sprinkle with minced garlic, oregano, salt, and pepper.
  • Bake for 25-30 minutes until the feta softens and tomatoes burst open.

Notes

Tips & Variations

  • Tips:
    1. Use Greek or Bulgarian full-fat feta for the best creamy texture.
    2. Reserve pasta water to adjust sauce consistency.
    3. Add fresh herbs like thyme or oregano for extra flavor.
    4. Toss in chili flakes for a spicy kick.
    5. Avoid overcooking pasta; keep it al dente for the best texture.
  • Variations:
    1. Add roasted vegetables like zucchini or bell peppers for a vegetarian twist.
    2. For a protein boost, mix in grilled chicken, shrimp, or chickpeas.
    3. Substitute the feta with a vegan alternative for a plant-based version.
    4. Experiment with different pasta shapes or even zucchini noodles.
    5. Add sun-dried tomatoes for a more intense tomato flavor.

Storage & Reheating

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat in a skillet over low heat, adding a splash of water or olive oil to restore creaminess. Avoid microwaving to prevent drying out.
