- 1 pint Cherry tomatoes around 300-400g
- cup 1/4 Olive oil
- 8 oz Pasta spaghetti, penne, or preferred pasta
- 3 cloves Garlic minced
- 1/4 cup Herbs (Basil, Oregano, Thyme) chopped
- Salt and pepper – To taste
- 1/2 cup Pasta water – Reserved (if needed for sauce consistency)
Set oven to 400°F (200°C).
Arrange cherry tomatoes in a single layer in a baking dish. Drizzle with olive oil, and season with salt and pepper.
Place the block of feta cheese in the center of the tomatoes.
Bake in the oven for 20-25 minutes, or until the tomatoes blister and the feta softens.
While baking, cook pasta in salted water until al dente. Reserve 1/2 cup of pasta water. Drain pasta.
Remove the baking dish from the oven. Using a fork, mash the feta and tomatoes to create a creamy sauce.
Add the cooked pasta to the baking dish. Stir to combine, adding reserved pasta water as needed to achieve desired sauce consistency.
